Just a few general comments: LibreOffice is a relative large desktop application so if you have a low resource computer (old or very low cost) performance will be slower with more open worksheets.
Performance is affected by the "size" of each worksheet. "Size" somewhat difficult to measure but more cells used, more formulas used and more formatting used affect performance. I have a few large worksheets for which I uncheck "Menu > Data > AutoCalculate". I must then press F9 to update the formulas. Several times on this mailing list people have reported slow performance related to cell formatting. Some worksheets converted from Excel include formatting "baggage" which can slow performance. Sometimes I rebuild these worksheets in LibreOffice to leave this "baggage" behind.
