Hi Julian, I can answer the hypervisor question for you. The statement about keeping hypervisors patched is a bit of a catch-all to try to make sure that if there is an issue in someone's cloud, that CloudStack doesn't automatically get the blame (we find issues are more often hypervisor related rather than CloudStack related). But as you've highlighted, that's a double edge sword.
I'd saying that with vSphere, we use the VMware java libraries to do the orchestration of vSphere via vCenter, so the likelihood of any vSphere update within a version causing something to break is minimal. That said, I only know of community testing of 4.11 against 6.5GA at this time, the standard advice is - make sure that you test it thoroughly before trying anything new in production (and ideally let everyone in the community know the results). As I recall 4.9 was not completely reliable with vSphere 6.5; the forthcoming 4.11 will be.
