You could use daily volumes snapshots. Recover involves creating template from snapshot and then launching a VM from that template.
Alternately you could use storage backup solution to backup disks out-of-band. Recovery involves importing such disks as templates and then launching VMs from those templates. How long does it take to backup and restore a VM depends on which of the above procedure you use and your environment (primarily disk i/o and network throughput).
