It depends. Some people prefer Java because its just programming code in Java. And they can use Eclipse / IDEA / Netbeans etc. People who prefer this tend to be already well familiar with Java programming and those editors. Others prefer XML as you can do not need as strong Java programming skills. And you can change the XML without having to re-compile. And with XML you can use different tooling which can assist you to edit or view the Camel routes. And you do not have to use either or.
