You just have to set the operationName header before invoking the CXF
endpoint. Something like this if you want to do this within a route:
...
<setHeader headerName="operationName">
<constant>myOperation</constant>
</setHeader>
<to uri="cxf:bean:myCXFEndpointBeanWith2Operations"/>
...
