This [1] doesn't seem to work with Excel 2010, so I assume this is an Excel 2013+ feature. If you see the extended format option, insert a picture, save as .xlsx and reopen it and if it's still there you can probably reproduce the xml elements.
Do you know how to modify the xmlbeans behind the xssf classes? Andi.
