I think you should be able to follow this guide:
https://openmeetings.apache.org/EditTemplates.html

It leads you to those files (but on your local installation)
https://github.com/apache/openmeetings/tree/master/openmeetings-service/src/main/java/org/apache/openmeetings/service/mail/template


Which you can then edit and restart your local server. Just don't forget to
back them up when you upgrade to a new version :)
