In case you installed into
/usr/lib/red5
instead of
/opt/red5
the location will be: /usr/lib/red5/webapps/openmeetings/WEB-INF/
openmeetings-applicationContext.xml

right after the build :)

binary distribution can be downloaded from
https://builds.apache.org/view/M-R/view/OpenMeetings/job/openmeetings/
