You should also be able to adjust them at runtime via webtools.

View-entities are mostly it aside from dynamic view entities (harder) but they only really make sense when the query is dynamic. There's also directly using the SQLProcessor but that should be an absolute last resort. The view-entities aren't that bad once you get used to them and there are tons of examples in OFBiz.
