The "latest" tag gets re-built daily, I believe, with any updates that
might be available in the base images. While the Guacamole code does not
change until we release a new version, there could be items fixed in the
libraries or applications on which Guacamole depends (Tomcat, Java,
libssh2, freerdp, etc.) that are updated, and the "latest" tag will
incorporate any of those updates into the image.
