You're right; ffmpeg had been installed from "okay" repo:

I didn't realised it at that moment and tried to make guacamole on centos 8
minimal instead. That was a bit harder as for most of the packages I had to
download rpm from /pkgs.org/ manually and install. Long story short it was
successful on centos 8; couldn't find any ffmpeg for that, though:

Just now; I tried your solution and built guacamole on centos 7 minimal
without ffmpeg and it was successful; here is the config on centos 7:

Type "make" to compile guacamole-server.

And back to your question regarding libavcodec/ffmpeg for recording the
session, i'd say no it's not essential; So all good with the current
setup/config.
