Not tested, but maybe something like

<concat destfile="versions.txt">
    <zipfileset src="a.zip" includes="version.txt"/>
    <zipfileset src="b.zip" includes="version.txt"/>
    <zipfileset src="c.zip" includes="version.txt"/>
</concat> 


Maybe you can bundle all <zipfileset>s to one construct ...
