In JEdit, it is specifically the XML Plugin that provides build.xml completion. I submitted a patch to them in the beginning of the year that updates the ant support of that plugin by using a custom ant task based on AntStructure. If you build your own XML Plugin from source, using this new task, it will update the auto-completion in JEdit based on the version of Ant used to build.
