Yes, it's possible. I run several UML's: webserver & webmail, anoter email with spam & virus checking, another to collect updates (apt-proxy) and so on. You don't need humfs or anything: the applications are installed inside the UML and you connect to them via ports. It works just as i they were individual servers.
