The rest role should have already been assigned to superuser, see Security App -> System Users tab-> Edit superuser -> Roles tab -> Granted roles. And the error you're getting while saving the form sounds like you're hitting http://jira.magnolia-cms.com/browse/MGNLUI-2468 which shouldn't have anything to do with your rest issues, but one never knows. I'd suggest you update to the latest 5.2.3 Magnolia version and latest REST module 1.0.3 and see it that helps.
