Whether that works depends on what the requirements on your project
are re GPLv3 / Open-Sourceness.

Note: You would also require a Contributor's License Agreement (https://en.wikipedia.org/wiki/Contributor_License_Agreement) - as we do - ensuring that any contributions to your GPLv3 licensed source code assigns copyright to 'you' (or the copyright owner of the source base) so that you can continue to dual license.
