Alejandro, You could but there lies a question of why should you do it? The idea of storing flat files is that they are easy to edit by a human. Most flat file CMSs use Markdown plus a frontmatter in YAML these days and that is really a good system. Check out GravCMS, Jekyll, Metalsmith, Hexo, for some examples.
