If you have a backup (e.g. Time machine) just rename the xCode app that is in your applications folder as "xCode 7.3" then restore the older version of xCode from your backup into the applications folder. LC should find it at startup (if not go to LC preferences > Mobile Support and select xCode using "Add Entry") and you should be back to where you were before the automatic xCode update.
To prevent automatic updates in the future open System Preferences on your Mac and go to the "App Store" panel.
