Hello, I spent a tremendous amount of time researching this. It turns out there is NOT an app for that :-)
I did finally come up with a setup that works but it is not cheap, not is it perfect. I can capture the iPad screen but it doesn't show finger touches like you see with the simulator. First you need some hardware that can capture HDMI. I chose this. http://www.bhphotovideo.com/bnh/controller/home?is=REG&sku=618348&Q=&O=&A=details Then you need Some Software to capture the incoming HDMI. Apple has an Xcode sample project called WhackedTV, that can do it. But I use ScreenFlow 3. ScreenFlow is what I normally capture screen casts with. The iPad shows up as one of the video sources you can capture when you configure the recording. Then in post processing I add the iPad Frame around the video. But as far as I know its the only way to capture and record the iPad screen.
