The fact is that the system comes with tons of fallback fonts in case the default font (e.g., Ubuntu Sans, Cantarell) does not support your language's characters. As far as I know both have the same alphabets available right now and both have plans of expansion in a future.
You are probably right, the effort of patching the shell and so on just to offer the same font for all languages is probably not worth it. Sticking to Cantarell may be a wise decision. Best regards, Alfredo
