I figured out a pretty easy way to get the video up and running on a
Latitude E6510 with NVIDIA NVS 3100m:

1. Attach an external monitor to the port on the back of the machine.
2. Install Ubuntu using the Alternate Install CD.
3. When you reboot into Ubuntu, your desktop will display on the external 
monitor (in my case, with the right third of the desktop missing).
4. Activate the Nvidia driver via System>Administration>Hardware Drivers.
5. Reboot (in my case, since I couldn't see the right portion of the desktop I 
had to open Applications>Accessories>Terminal and enter "sudo shutdown -r now").
6. When the machine reboots, your laptop display should be working properly.
7. (optional) Use System>Administration>NVIDIA X Server Settings to configure 
your external monitor and save the settings to the new X Configuration file.  I 
had to log out and log back in for the Gnome panels to show up on the laptop 
display instead of the external monitor.
