Trying to pinpoint where the problem can be I found that the problem is not present in fedora with the exact same set up. I think there is something in Mutter or Gnome that is different in Ubuntu that let's this bug appear. Using Fedora fixes the issue for me but I thought I'd post it here for future reference.
