Yeah looks like it's definitely unhappy about your monitors' EDIDs. You don't have any adapters or other hardware connected between the computer and the monitors do you?
I take it you were running nouveau previously, and was able to correctly configure to 1680x1050 via gnome-display-properties? I assume you're using TwinView to do the dual head action, which presumably depends on EDID being available and accurate, so that's probably why it lets you change up to 1366x768.
