You can run off the live CD with no hard disk at all. As has been mentioned previously it will use the swap partition if it finds one, but that can be turned off in gparted. Then it will not be using the hard disk at all. Also it is not a matter of 'unmounting' the hard disk, it will never be mounted in the first place (apart from swap as mentioned). 'Mounting' is something that the OS does as it starts up, so it is up the the OS on the live CD whether it mounts the disk or not.
