I'm able to sync these with my Nokia e63 using the Exchange client for the Nokia phone. Not actually tried syncing Google Mail with Thunderbird (with the Lightning Plugin) or Evolution but I believe it can be done. I do this via wifi on the phone and the 3G connection (haven't got a data cable and I haven't had much luck with the Bluetooth yet).
