You might want to look into OpenChange. It's still fairly early days but there is a working exchange proxy from what I can tell. I haven't tried this at all yet, but thought it worth mentioning in case you've not heard of it. http://www.openchange.org/ It's from the Samba crew who got access to all the protocol specs following the EU Commission's ruling last year.
