I can't help directly but a Google search (http://www.google.co.uk/search?q=%22Canon+PIXMA+iP2500%22+Ubuntu)threw up a link to an Ubuntu Form thread that is called: "[SOLVED] canon pixma ip2500 not printing" If you've read this already sorry. But it might be worth reading through this and seeing how others managed to fix it. There are other potentially interesting pages on the Google search too.
