FreeNAS is always a good OS for running a light NAS box. It manages all the drives, but runs common linux ftp daemons, so it's pretty stable... we have 2 3TB machines that backup an entire windows domain and a couple of external office machines every 2 days.
We have never had any problems with FreeNAS, and it works flawlessly with the Ubuntu and Win workstations.
