When you get the GRUB countdown, press escape then move down to the kernel line and press "e" to edit it. Remove splash and quiet to see all the kernel messages fly by. If it stalls you should take note of the last thing that was echoed to the screen. I had this with an edgy system and it was down to a problem with an external USB hard disk.
