Missing translations isn't so startling. The translators are volunteers, and all languages suffer from missing translations to some extent.
Maybe you want to get in touch with the Italian translators team: https://launchpad.net/~ubuntu-l10n-it and call their attention to your findings directly. And if you want to help out as a translator, talking with others in that team would be the first step. They can guide you further.
