I don't know right now if there is a "canonical" way of restoring a
single file from a package. Too bad --reinstall didn't do it. You might
have to get the postfix deb and extract /etc/postfix/postfix-files
manually.

Basically you dpkg-deb -x <deb> <somewhere> and than copy the file over.

Or, maybe a sequence of "sudo apt remove postfix && sudo apt install
postfix" will do it correctly, while preserving the config you have.
