I find that I'm making lots of mistakes when typing with even a single finger (maybe because of dry hands, some keypressed are not registered unless I type very accurately and slowly) so I cannot really imagine typing with more than one finger. But if you manage it, I agree that it's a valid usecase which we should keep working. However, I don't think that it should be the default: having the keyboard appear in a much smaller size and with a "maximize" button on one of its corners (which brings it to the current size) might make everyone happy.
