Thank you for the suggestion. The file looks like [see below]. So the problem
is that I can find both, the "internet.eplus.de" and the "tagesflat.eplus.de"
in the file. I want Ubuntu Touch to choose [context1] (i.e. the default,
proposed by the provider).
You mentioned the editing GUI did not yet land but I wonder why Ubuntu Touch
chooses [context3] instead of [context1]?
To avoid paying for all those flatrates, I just need to remove [context3]
completely?

Maybe your APN is not the right one. GUI for editing has not landed yet, but
you can try to edit it from the command line:
$ phablet-shell
phablet@ubuntu-phablet:~$ sudo stop ofono
- Edit as root /var/lib/ofono/<your_imsi_here>/gprs
