Hi Tyler,
Due to the changes with Ubuntu in the 17.10 cycle now using
gnome-shell we don't have independent ISO's.
Download and install Ubuntu 17.10, then run
sudo apt-get install vanilla-gnome-desktop
Which will get you more or less the Ubuntu GNOME experience!
