Perhaps I'm missing part of the picture, but it seems to me the display manager picks whatever display server it wants. In other words, if Kubuntu uses SDDM, it will simply use Wayland and no mir components will be used. Likewise for other flavours: The GNOME remix can simply start GDM, and it will use Wayland, flavours that want to continue using X can do so. The only difficulty is if you want to allow users to switch between a KDE and a Unity session using the same display manager. But I suspect that's not a big enough use case to care about. If someone ports lightdm to Wayland, I suspect lightdm could start either display server based on some kind of boot option. Wayland will just work in Ubuntu.
