Does the DVD install extra stuff than the CD if you install a desktop? I think we should be careful of diluting the experience is by providing alternatives to packages on the CD (e.g. providing Thunderbird if evolution is still the default.) I also think that it would be good to have a metapackage to install the extra packages if you install from the CD first, like the kubuntu-full package that Scott mentions. Looking at what I have installed that isn't default, I would suggest * inkscape * gimp * frozen-bubble The other things probably aren't appropriate (wireshark?)
