A lot of PC act as a server, but it is not a real "production server" as you
maybe have in mind.
Some of such a "servers" do not have UPS and/or monitor/keyboar (embedded
devices) and some time they are located far away from your home/office, so
prompt action (keypress) can not be performed.

Examples:
Home NAS
Weather monitoring server
PC running in the car (GPS, wifi etc..)

Ubuntu minimal install is ideal for some of them. I am scripting GPS logger
+ WiFi fpt transfer application based on the Alix3d3 (AMD Geode)
motherboard, which consumes about 4W. Here I am using Ubuntu minimal server
as well :D
