Hi, coz! Are you sure you installed gnome-color-chooser from the official hardy repository? It uses the same prefix as the gtk-engines package ( --prefix=/usr ) so you don't need any symlinks.
If not, please purge your current install, and just do an apt-get install gnome-color-chooser (assuming you're only using official Ubuntu Hardy repositories, of course).
