Same problem here in oocalc. The displayed characters are sometimes wrong, but when clicking on the cell, the content shown in the toolbar is correct.
Restarting OpenOffice sometimes solve the problem with some characters (but not always all of them). This bug also shows up in the development version of OpenOffice 3 (tested with ooo-dev300 m21). I downloaded this one directly from the official site, so it seems the problem is either upstream or located in another library (pango?, although unlikely, as we would have seen the bug elsewhere too). As for the video driver, I use proprietary nvidia, but I really don't think it's related. The bug also appears when opening a single document. And last but not least, I've experienced the bug on both 32 and 64 bits versions of ubuntu. I've read somewhere about setting the LANG environment variable to "en_US.UTF-8", but that doesn't help. Oh, btw, OpenOffice isn't able to find any JRE, although I have sun- java6 and sun-java5 installed. When trying to add the path manually, it complains about the directory not holding any JRE.
