Oho! A breakthrough, once I realized that ldm_validate_privheads() is part of support for Microsoft Logical Disk Manager partition tables (aka "databases") rather than something more obscure.
Something, somewhere is invoking the Logical Disk Manager support, but apparently not failing over to the other common formats when that doesn't find a table. Simply mounting the disk -- even "mount /dev/sde /mnt" with no options properly autodetects the VFAT filesystem -- does actually work!
