I have the option also greyed out, although not for the same reasons. I
think it happened when I vim-edited /etc/network/interfaces to change
from DHCP to static IP. I don't exactly see the connection but that's
the last thing I remember doing before this problem.

Also, I notice that the admin tool Network now has a button to unlock
(what?) before I can change options. I've recently upgraded from 7.10 to
8.04 and I never needed to unlock anything (I think the button was not
even there).

Finally, maybe unrelated, but when I use Network Tools and I press
Configure for eth0, I get an error "The interface does not exist".
