I was seeing very similar behavior on a 8.04 Hardy Kubuntu beta install and my 1GB shuffle, until this morning when Amarok was updated to 1.4.9.
Amarok 1.4.8 would not auto mount the ipod. I would have to manually mount it then "connect" it in Amarok. "Disconnect" from within Amarok worked perfectly to unmount the device. My difference was I never had any issues w/ Amarok hanging, it simply didn't auto-mount. But now w/ 1.4.9, Amarok will not connect at all, I can mount the ipod manually, and click "connect" in Amarok and nothing happens, I am currently looking for a bug relating to it.
