What is interesting is that after using displayconfig-gtk to configure Screen 1 as "LCD Panel 1024x768" it doesn't just fix the resolution issue, the corrupted mouse cursor issue also seems to have gone away.
I'm going to check what Gutsy and Feisty LiveCDs do since I don't recall them having the issue.
