If VLC isn't listed, that's a bug; a separate one. File it. There are other bugs about other apps not being listed, e.g. Epiphany. It's not good practice to deal with separate issues in the same bug report.

The whole reason you used gconf-editor and filed this bug is that you didn't know about the new tab in the Nautilus preferences. It's not that VLC isn't available among the choices. It's not that some other app isn't available. It's not that the new way of choosing default actions upon mounting sucks. It's not some conspiracy theory about removing functionality to deliberately annoy users. It's one specific potential bug.
