An update to my comment above: with the Hardy Beta Live CD the Screen Resolution application still lists the only refresh rate as 0Hz, but clicking on the "Apply" button does work, so it's once again possible to change resolution on-the-fly when running the Hardy Live CD in VMWare Player.
