Am afraid I don't have the log file you requested Colin, but I can provide some steps to (easily) reproduce the bug. This is caused by the environment, and assumptions the installer makes when it is connected to a network.
1. Attach PC to LAN, ensure the network does *not* have any connection to the Internet, but is a viable network in every other way. 2. Begin the installation, I do not believe it matters what settings are used. 3. The installer reaches the 'Configuring Apt...' and 'Scanning the mirrors' stage. 4. Installer hangs and does not timeout (in this case it was left to work itself out for at least five minutes). 5. Remove network cable from PC, the installer will jump to life again! It seems the installer is assuming that the PC has an available Internet connection because it has any network connection.
