The bug report is partially inaccurate: --debootstrap-options, which
appeared upstream 13 years ago (commit 80bfaf9f), is not in the Ubuntu
package at all. The typo referenced here is not what is preventing  the
use of the command.

As a hack, I believe you can append `DEBOOTSTRAP_OPTIONS=` to
config/common where it will be picked up by
/usr/lib/live/build/lb_bootstrap_debootstrap.

I'm not sure about the assertion that "the project is also dead
upstream" because it seems to have sustained development over the past
several years at https://salsa.debian.org/live-team/live-build.
