The monitors were not being detected at all. But I just got an update to the nvidia modules package - linux-modules- nvidia-560-open-6.11.0-18-generic, and after installing that, the monitors are being detected again. I'm guessing that it was just nvidia driver lagging behind the linux kernel update.
