I made the same reasoning as you did, went for mainline vmlinuz-6.8.12-060812-generic, and did not see any problems. Then update for the vmlinuz-6.8.0-??-generic kernel started coming, so I decided to revert back to them. I've been runing 50 and I'm rebooting for 51 after this post, and never had any kernel-related problems so far.
