I think this si probably some interplay of multiple packages, like
Edge/Chrome, Gnome, Wayland maybe even touchpad driver (hope not). I
noted on the Internet reports on the same problem:

Proposed solution there is to activate system title bar, which indeed
works correctly, but this workaround is not great as it takes precious
vertical space.

It seems that problem is that Chrome/Edge are incapable to tell
difference between tap-and-drag (used for moving window around) and
double-tap (maximize window). Can't tell if it is their fault, tho.
