I think this si probably some interplay of multiple packages, like Edge/Chrome, Gnome, Wayland maybe even touchpad driver (hope not). I noted on the Internet reports on the same problem:

It seems that problem is that Chrome/Edge are incapable to tell difference between tap-and-drag (used for moving window around) and double-tap (maximize window).
